I've been raking leaves for 2 hours this morning before a hearty brunch (usual thing for a weekend!) so I've got a few additional calories. The sun was out and although it was chilly, I was wearing a t-shirt (warm work!) and managed to gather about 3 or 4 large bags of fallen leaves. We have a mature oak tree in the centre of our garden and the leaves takes forever to fall. So the leaf sweeping is my exercise workout at this time of the year!
We had some Cumberland chipolatas left from yesterday and half a tin of plum tomatoes, so added some bubble & squeak. I have looked at various recipes on-line, but I think my recipe is a much easier version as I cooked everything together in the microwave first and didn't peel my potato!
The secret to great bubble & squeak in my opinion is not to rush it. Otherwise you're just eating cabbage and mash!
I should add that the 229 calories was just for the bubble & squeak. The three chipolatas were 262 calories and the plum tomatoes 26. The whole meal was therefore 517 calories.
Potatoes -¾ Med/150g
Savoy Cabbage -100g
Olive Oil -1 Tbsp/15ml
Butter -12g
Onions -¾ Med/135g
Preparation:
Peel and finely dice the onion. Finely shred the cabbage removing any tough stems. Wash and chop the potatoes into 2cm squares (no need to peel!).
Method:
Place all the ingredients into a microwaveable lidded dish or steamer with about 50ml of water.
Cook on full power for 15 minutes, stirring half way through the cooking time.
Ensure that the potatoes are cooked through.
Drain well, add the butter and mash everything together with a potato masher.
Pour the oil into a large non stick frying pan and heat over a medium heat.
Add dollops of the cabbage/potato mixture, squashing with the back of a spoon or a fish slice.
As the mixture cooks, turn it over with the fish slice. It doesn't matter if it breaks up.
Continue cooking for about 20 - 30 minutes, turning over sections of the pan every 5 minutes or so - don't allow to burn, a nice golden brown is what you are trying to achieve here.
