Buddha bowls

I turned my planned baked sweet potato into a buddha bowl! I came across the term when googling about this afternoon. It's a nice idea, great for leftovers, and makes a pretty dinner 😀🍲

Definitely looks yummy. I like sweet potato but I'm always a bit stumped what to put with them. Is there a dressing on the salad?

I eat sweet potatoes quite a lot - I love them roasted whole, wedges, chunks (lovely in salad), add them to veggie chilli, casseroles, mash with sausages, in a frittata.

I made an olive oil and balsamic dressing. It was good!

When you roast them what do you normally put on them?

I use olive oil spray (Bertolli I think), and a bit of salt and pepper, maybe some rosemary from the garden.
