Tonights dinner.

Aldi yellow fin tuna steak (135 cals) with a pouch (microwave) of Mediterranean Quinoa With Wheat Berries, Tomatoes & Black Olives (179 cals), runner beans (15 cals), carrots (18 cals), courgettes (40 cals), purple sprouting (12 cals). Courgettes were oven baked in half a tbsp of olive oil (64 cals). Fish was pan fried in half a tbsp of olive oil (64 cals).

TOTAL: 527 calories

All very tasty and the quinoa mixture was really nice for a change (much healthier than rice too!)

Never had quinoa but that looks yummy 😊

Think the quinoa is virtually invisible - the wheat berries are the larger sized grains.... This was a pouch ready made - just needed to be heated in the microwave. I think I may have bought it from Aldi....

I have a nice recipe using it:

Makes 3 portions which can be stored in the fridge for 3 days.

Quinoa, Dry Weight -50g

Cucumber -40g

Tomatoes, Baby -70g

Mint, Fresh -2 Tbsp/3.2g

Lemon Juicee-½ Juiced Lemon/17.75ml

Spring Onions -1 Med/15g

Chopped Walnuts - 20g

Preparation:

Cook the quinoa according to the instructions, drain and leave to cool. I cook mine in a microwave rice cooker for 10 minutes.

Squeeze out as much of the cooking water as possible (I squash against the side of the cooking pan with a tablespoon to do this).

Remove the soft seeded core from the cucumber. Finely dice spring onion, mint and cucumber. Finely chop mint. Roughly chop the walnuts

Mix together all the ingredients and add a squeeze of lemon juice.

That looks tasty. I've tried some of those quinoa- mix pouches too. I think the ones I tried had quinoa and bulgar wheat or chick pea added. Waitrose and M&S sell them too. Quite filling and easy, good with fish or chicken .

We often get the rice pouches - but these are less calories and the contents healthier. We get ours from the shop that begins with an "A" (blue writing!) and they are only 99p compared to others we've had which have been £1.50 plus!

We don't have an A in our town but I do shop at T and like you I often get their own brand pouches as they're much the same but cheaper. I also find a half share of a pouch stops me overeating. When I cook loose rice I tend to cook too much and go back for seconds.
