I know lot's of you have cut out bread or try to have low GI diet. However Zest has been posting about bread and as I love baking the odd loaf I wanted to join in.
Even if you give the bread away I would say it's worth doing for enjoyability!
This is a loaf of soda bread I made the other week.
A very simple recipe, 330g plain flour, any kind, white, wholemeal, rye, or a combination * one teaspoon of bicarbonate of soda * half a teaspoon of salt
2 tablespoons of soft dark brown sugar * 300mls buttermilk or natural yoghurt
Preheat oven 180C, Gas Mk4. Combine dry ingredients in a bowl, then stir in the buttermilk/yoghurt. Knead very lightly and form into a rough ball, slightly flattened. Place on a greased baking tray, sprinkle liberally with flour and score a deep cross into the dough with a sharp knife. Bake for 50mins. When it's cooked it sounds hollow if you tap on the base of it.
