Busy in the kitchen... Butternut squash gratin and Cauliflower Cheese soup

Have been busy batch cooking today. The first recipe was a lovely rich cauliflower cheese soup - I made 7 portions and it worked out at 160 calories for a filling bowlful. As I am following the Blood Sugar Diet and looking to include lots of healthy fats, this had double cream in it. Mmmm, made it really rich and creamy. Well worth the additional calories to achieve the taste and I wanted to include the extra fat too as you can have a smaller portion and it will keep me feeling fuller for longer.

The second batch cook was a large butternut squash gratin. This includes a cheese called "Pie d'Angloys" - a French cheese. I found this description:

"Pié d’Angloys is a sinfully rich and creamy cow’s milk cheese, similar to camembert. One of France’s favourite, it originates from the legendary Burgundy region of eastern France, which well-known for its fine foods and wines. Supple and soft, the combination of its melt-in-the-mouth texture with its rich, full flavour creates an unforgettable experience."

This recipe involves peeling and chopping up a whole butternut squash, which in itself must burn a fair few calories!

Half the butternut squash is made into a seasoned puree, adding creme fraiche and 30g of the Pie d'Angloys, plus fresh thyme. You then layer this with thin slices of the raw butternut squash and top with a mixture of beaten cream and milk. The recipe just mentioned milk, but again, I am incorporating more fat.

After baking covered for 45 minutes, you add a layer of breadcrumbs, some slices of the cheese and a drizzle of olive oil before baking for another 20 minutes until the cheese has melted and the whole dish is golden brown. This worked out at 296 calories. I'm having it tonight with some slices of Yorkshire ham and a green salad.
