I have been on annual leave since last Wednesday and ended up with too much time to think. I have blitzed the house and walked the paws off the dog. In a desperate attempt to keep my hands and mind busy I have baked.....and baked...... and baked some more, cupcakes, brownies, cookies etc..... Oh no, I hear you all say. Chill friends, I have not eaten any of it!!!! I have gift boxed everything up and distributed them between my neighbours and friends. I have even taken a huge box to the homeless shelter in my nearby town. Much as I love baking and find it very therapeutic, fortunately I don't have much of a sweet tooth.
I thought it would be really hard to get back on my 'healthy me' wagon, but no - I am doing just fine with it. Today was scrambled egg, mushrooms and tomatoes for breakfast. Lunch has just been consumed - homemade soup, croutons and crusty bread. Dinner is partially prepped - quick beef stirfry, and supper will be my treat for the day - a mince pie with a satsuma.

I like the idea of "gifting" baked goodies, my granddaughter's entire primary school (admittedly a small village school) was supplied with gingerbread men, courtesy of the two of us
Your cakes look so professional, and I bet your house has smelled gorgeous with all those scents of baking going on.
Your breakfast and lunch both sound really tasty - and it's good to hear your dinner is already partially prepped. Enjoy that mince pie and satsuma later.
I also have a cake in the oven at this very moment! 2 infact - mixed fruit cakes made with no sugar - just lots of oats, seeds, and some almond and coconut flours. Yummy! I'll allow myself one slice later today.

I agree cooking and baking is a great way to fill your time. It sounds like you're pouring yourself into it, and spreading the love around so to speak. Goes to show food isn't only about feeding yourself. Glad you're feeling back in control and getting the time you need to process everything

Oh Shellie, how good are you? I love baking too but unfortunately I can't resist trying out whatever I produce so I haven't done any baking for months, maybe in the new year I'll have to test my resolve and get back into the kitchen.
By the way, those cakes look absolutely delicious.

I'm not much of a cook but have been 'volunteered' to make dessert for Xmas day.I'm thinking of making a fruit prosecco jelly and some brownies served with half fat cream, I've bought the ingredients and will be getting head down and cooking!!🤔
