So...I didn't used to buy them, but just have enjoyed sweet potato fries if I am having a pub lunch. Then I tried making homemade baked fries and I couldn't get enough of them. I decided to find out more about them nutritionally, and was interested to find that when they are baked they have more calories. !00g boiled 84 cals, 100g baked 115 cals. Then I discovered that baking them radically changed their GI rating:
"When compared to roasting or baking, boiling has also been shown to have a more favorable impact on blood sugar regulation and to provide sweet potatoes with a lower glycemic index (GI) value. In one study, the average GI value for roasted sweet potato was 82, for baked sweet potato 94, and for boiled sweet potato 46."
I just thought this might interest people. I am careful about blood sugar even though to date I have not shown any high blood sugar readings in my blood tests, but still I am careful, and it's good to know these things.
Anyway, I tried throwing a chopped sweet potato into my favourite leek and diced chicken hotpot and was delighted to find that it is just as delicious when it's boiled as it is baked. So now I intend to merrily add it liberally to much of my cooking.
