Have been so wrapped up in making soups this week I've just realized I haven't had meat for 4 (FOUR) days! have porridge for breakfast - one variety of soup for lunch - another variety for dinner - and have felt very full every day! Must be on the Soup Diet!

Lol bless ya. You are obviously enjoying your soup. Ive never really liked soup so debating making some homemade soup to see if its just the cuppa soup or tin types i dont like. As long as you are getting all your nutrients and are feeling full go with what you like. I dont eat masses of meat, chicken mainly occasionally pork sausages or ham etc.

I think anything is better than cuppa soup! I sometimes buy fresh soups from Waitrose (or Sainsbury's, Tesco etc) 600ml but less than 50 calories per 100ml - add more veg, lentils, chickpeas - and poss now some chicken - making approx 1 L - then divide into 4 ( and freeze 3) - usually 150 - 200 calls per portion - and very filling! Or I boil up some frozen broccoli, cauliflower and any 'spare' veg with veg or chicken stock - purée if you want - loads of black pepper too! Making me hungry just thinking about it! Yum!

As a vegetarian, I would advise making sure you're getting protein and iron (beans/cheese/eggs and green veg). If you are, then this might be why you're not missing the meat. Maybe you can add bits of chicken to your soup, like an asian noodle soup, light and tasty, with hidden goodies buried under the noodles...

I make soup most days. I put lentils in it to bulk it up. I find it really good for using up all the little bits of veg left over. I like Stilton and broccoli, butternut squash, tomato and lentil, mushroom, leek and potato. All really easy and so satisfying. Keeps for days too. I'm alone a lot so it's great for me. I recently started making my own bread to go with it. Very easy delia recipe wholemeal made into rolls which I freeze. So delicious that no butter is required and I love butter but it doesn't love me that's for sure. Keep on making soup judywood.
