I am surprising my husband with a trip to norfolk next week for his birthday and to avoid the lure of a pub lunch I was thinking of taking a picnic. But I can't think of what to pack? Any ideas? Help

Hi I would keep it simply, low fat but tasty sandwiches, salad & fruit
We like celery boats filled with peanut butter or cream cheese. Sun dried tomatoes, peppadew peppers, hhalloumi cheese to nibble on. Melon.
I've recently done a very nice lentil and sweet potato pâté that would do well spread on a bit of crusty bread or with crudités - and how about doing mini frittatas - heavy on the veg filling? You could also flavour cottage cheese - a great high protein and low fat food! And I have found that berries are low in calories so a fruit salad of mixed berries would be lovely!
Hummus with various crudites (asparagus, green beans, capsicum slices, carrot sticks, radishes, etc. )
a really nice protein to go with salad is spray a muffin tin, line the sides with small slice of bacon and drop in 1 egg salt and pepper or slice of tomato and cook in oven. These are lovely hot or cold. have a great time.
Wow you're lucky, all these ideas, I've learnt some ideas. My hubby and I often pack a picnic and drive to Cromer. Fruit is a must. A packed salad, my favourite salad, yellow peppers, sun ripe tomatoes, celery, grated carrots, baby corn and pop peas. I like salad dressing. We take a couple wraps. And to finish off, a beach front ice cream. Enjoy.
