Try some spicy cous cous. Ainsley Harriot does really nice ready to go cous cous that is really easy to make. Otherwise make up your own! I use veg that I have left over and add whatever herbs and spices i fancy. I just experiment really!
A lot of people don't like it as they don't put about enough seasoning in so maybe add more than you usually would to see if that makes a difference. I love mozzarella, that's a good idea!

You could use bulgar wheat instead. It has a nicer, nuttier flavour and has a lower gi. It just takes a couple of minutes longer to cook.
It's a grain. Very easy to get in a supermarket. You can use it to replace couscous as they have similar properties but without the high GI.
Dry fry prawns and add your choice of flavour, such as garlic or lemon. Serve with veg and rice
oven cooked chicken thighs( no skin) with your prefered veggies. no oil needed ,I just add boiled water to help the meat and veggies cook faster
