I’ve been making this soup for lunch this week. Slightly different to the recipe I’ve been giving the vegetable a quick fry in olive oil (easily left out if you are oil free) adding the barley and stock and letting it all simmer until soft. It’s really tasty. I’ve put potatoes in mine which are particularly delicious 😋 My picture doesn’t do it justice.
