Here's some soup I made tonight I'd been out visiting family and was hungry when I came home, so I opened a tin of chickpeas and blended 2/3 of them and then I gently fried some button mushrooms diced garlic and the remaining chickpeas and then added them to the bowl of coked soup. I seasoned the soup with a little ginger, coriander, cumin and loose coriander. The chickpeas and mushrooms are slightly crunchy and much nicer than croutons which keep it gluten free.
Chickpeas fried are an amazing healthy snack as you can have them with lots of things or on their own...π
