Tasty spelt sourdough

Hi all

I'm on a low fodmap diet for IBS and it's working really well. I made a low fodmap soup today although its ended up really thick so I'll water it down when I have more, it's a roasted carrot, ginger and turmeric healing soup, it tasted delicious.

I've been making spelt Sourdough for a while now and made 3 loaves today, I have to say best ones I've made so far, delicious.

Thank you Debs, there's a fair bit of ginger in the soup and its delicious. I definitely recommend this elimination diet for IBS, it works for 75% of people.

On another note, I've finally got round to trying the Buttermint Tea you mentioned quite a while ago now, it's really lovely so thank you for recommending it.

That's such a relief , I will be trying the fodmap diet, I've been meaning to start my food diary but with the flare up, it would be impossible to tell what's what. .

Glad you enjoyed the butter mint tea. I could not get hold of the tetley digest anywhere, so I've got the winnings version x

I have to say its working a treat, I can send you some recipes that I've found are really good like today's soup. Now I'm much better I haven't clue what food I should avoid but will know when I follow the reintroduction phase.

Its lovely tea so thank you.

I've tried other Digestion teas and found they work.

Interested in how your sourdough is. I occasionally meet my wife for lunch at a cafe where the only vegan option is sourdough baguette, the crust of which is so tough we’re worried about our teeth! is this a feature of all sourdough bread? Tough as old boots? 😉

Funny thing is I love the chewy crust but it doesn't have to be like that and isn't particularly a feature of sourdough. I bake mine with water in the oven to make steam and then put a damp teatowel over the top so it's more chewy. If I bake it without the steam and no teatowel over the top then its crusty.

It's very satisfying making it as I love my bread and can only eat sourdough as I have a sensitivity to yeast and the gluten when bread is made the faster way. It's the fermentation process that works as there are less fructans in the gluten.

Hi Alicia your roasted carrot and turmeric soup sounds delicious and your sourdough bread looks just so good.

My gastro told me how effective many people find it as said how similar my diet was to a FODMAP diet.

Thank you and it was delicious, I'll be making it again for sure. I've found quite a few low fodmap recipes online but I also have a low fodmap cook book. The bread was the best I've made, I loved it and glad I made 3 loaves.

Yes I can imagine the low fodmap diet is similar to a diet for those with coeliac disease. It's very effective with me.

i love sourdough bread and i wont be going back to eating any other kind now. i toast mine lightly and have it was avacado or nut butters is delicious. its good for your stomanch as i believe there is a mixture added to it with the same kinds of things as probiotics. enjoy your lovely bread. i get a great sence of gratiitude when i eating it. all the vey best. love grace xoxo

I love my toasted and eat it every day, I love it and i actually have lovely rising dough at present. It's risen really well today and I actually forgot to warm the filtered water slightly.

I love putting my homemade peanut butter on it, a fabulous combination. I bet the avocado on top is delicious.😋

Yes the fermentation process is very good for the tummy.

I totally agree, when you make it yourself there really is a great sense of gratitude.

i have it with mashed avacado as well its heaven, i get quite depressed when i'v realised iv eaten my last slice. 🤗

I'll give mashed avocado a try if I'm able when I've finished the low fodmap diet for IBS because on the diet you are only allowed a very small amount, about 1/8th of the fruit. I'm so glad I started making Spelt sourdough as I absolutely love it. :)

i dont put avacado on at the same time as the nut spreads. as i don't want to waste it i eat the whole avocado. its a lot to eat but i manage. i understand what your saying but at least you can enjoy your bread. i dont make my own i buy it. hopefully the next step for me is making my own i did watch a video on utube of someone making it and they have to make a mixture and feed it and its quite a lot of work keeping it for 7 days i think it was then adding more. it was a very enjoyable video thats what got me started to give it a try as i have stomach problems since i had my gallbladder removed and my bile duct reconstructed as the stone was growing inside the bile duct it was all removed. it was a 5 hour operation im completly vegan except for a tiny drop of milk in my tea. iv just bought little bags to make oat milk and nut milk so lets hope i can take the oat milk in my tea. you can also make little cookies with the left over oats. its very exciting. so thats the next think i will be doing, i will let you know how it goes.. im very slow at getting round to things. but i'd say that vegan food is much tastier than meals with meat. who would have known that? take good care of yourself and lets hope you can someday have some avocado on your bread or maybe find someone to share it will so it doesn't go to waste. love grace xoxo

It's good that you manage to eat it for sure. I make my own peanut butter and it tastes awesome on the bread. I certainly do enjoy the bread. Don't read too much into the video as actually it doesn't take much time at all. Have a look at (this is the recipe I follow):

Believe you me when you've made it a few times you will know exactly what you are doing, I even forgot to use tepid water yesterday (I use filtered) but the bread still turned out fine today.

Oh my goodness, you certainly went through it and the amount of pain you must have been in. Our tummies are a mind of their own in what they do and don't like for sure. I've made oat milk, almond milk and cashew nut milk (I can no longer eat cashews as they are high fodmap and they do upset my system). I have a nut bag and the milk is so easy to make, soak the nuts, whizz it up in a liquidiser and you are basically done. A good idea to make cookies with what's left. I totally agree with you that vegan food is far tastier than meal, I cannot stomach meat anymore.

Look after yourself and here's to your nut/oat milks and bread, honestly none of them take long to make, the bread may sound complicated but it's not.
