I obtained a Spelt Sourdough Starter and Bread recipe on the IBS Network as those with IBS may tolerate it more than other gluten because of the way it's made. Unfortunately I've had no success whatsoever in making it as for some reason it won't ferment.
I've made normal wheat sourdough many times with no problem but cannot get this one to work. Do any of you have any success with a Spelt Sourdough, if so would you mind sharing the recipe or your hints and tips on how you made it?
Oh dear that’s such a shame. Jerry is the Paul Hollywood of HU bread I’m hoping he might be able to help. A bit of a daft question but was the spelt flour well within date?
It certainly is and yes the flour is within date although the one I'm using at present it to be used by the end of this month but it was an unopened pack when I started. I also tried a newer flour I had but that didn't work either.

Hi Alicia, this is bad luck and its sounds like the starter isn't active yet and needs feeding, here's a link about making sourdough that may help.
It's just now bubbling like it should. I've made a lot of normal sourdough bread I.e. using normal wheat flour but not with Spelt, this is the first time. This is just the starter, I've not made it to the bread.
