I made a lentil roast for lunch today. I thought it would make a change and be cheaper than a nut roast. It was a delicious lunch. I made the lentil roast yesterday evening so with only the vegetables to prepare and cook today it made a quick meal for two.
I had it with stir fried cabbage, peas and spinach. Swede, carrot and roast potatoes.

Hi thank you and yes it was very easy. I fried onions, mushrooms and garlic and added that to the cooked puy lentils. Added a grated carrot, dried sage, parsley, passatta, miso and breadcrumbs. Mixed it all together and put it tightly in a bread tin. Cooked it for about 45mins. If I make nut roast I do the same but with nuts π
Hi, youβre not a pain π I donβt really use exact measurements with what I cook but I would guesstimate that about 1/3 of the whole mixture should be breadcrumbs and then squash it down well into the tin as you want it to hold together and not be too wet π
