This morning I had some extra time so made myself brunch with some sourdough I found in the supermarket which was vegan.
I fancied black beans (turtle beans) so had them with fresh garlic on the toasted sourdough with mushrooms and some delicious tomatoes I picked this morning.
Black beans contain potassium which counteract the effects of sodium in the diet and regulates blood pressure.
Folate needed to make red and white blood cells in your bone marrow.
Vitamin B6 helps with brain function and generates serotonin and also helps the body deal with stress.
Tomatoes are packed with carotenoids which is an antioxidant
Mushrooms have B vitamins selenium, potassium copper and vitamin D
So just from fancying a few black beans I have had all this goodness in one meal. We all know fruit and vegetables are nutritious but Itβs amazing when you look into the health benefits of simple every days foods just how great for you they are and how much goodness you are putting into your body without even necessarily realising.
