Today for Lunch, I sautรฉ sliced Mushrooms and bitter melons in sesame oil and seeds with plenty of garlics and green onions. It is a simple dish but packed with health benefits and I enjoyed these gifts of Mother Nature. To me, thatโs the true Miracle on Earth! ๐โค๏ธ
I incorporate many mushrooms into my meals because they have great anti-inflammatory, antioxidants properties such as B vitamins (B2, B3, B5, folate), Phosphorus, VitD, Selenium, Copper, and Potassium. I particularly love Wood ear mushrooms because comparing to others, they have larger quantities of minerals and good source of B vitamins in particular.
In addition, I also make soup or sautรฉ bitter melon because it is a good source of nutrients like fiber, vitamin C, folate and vitamin A. It is known for reducing blood sugar, cholesterol and may have cancer-fighting properties.
Awe Debs, you canโt find themโฆ hmmm maybe some farmer market with small stands where they bring their crops out might have them ๐คYes, I loveeee banana blossoms. I always have with my noodle soup too. I made food post before ๐๐ We definitely have the same taste in these awesome herbs and veggies โค๏ธ
I think you will like them. Since you never tried before I would recommend to soak them first in water with just a pinch of salt after slicing for few hours and then rinse to mellow the bitterness first. ๐๐

You are absolutely right about drying mushrooms under the sun. The wood ear mushrooms I have are dried one. ๐๐ Yes itโs very traditional dish we have over there and so good. I sometimes make with chili oils too and sliced cucumbers, balsamic vinegar so refreshing and yummy. ๐๐
Cold noodles with chili oil mushrooms sound so good, I think for dinner I just need to make some cold noodles and add these in. ๐๐

Great looking dish! I used to hate the taste of bitter melon as a child, but now I don't mind it at all. I've always had it with scrambled eggs. Love the addition of wood ear mushrooms
