I’m not quite sure what you would call this but it was delicious.
I boiled quinoa and added oil free fried mushrooms and black beans.
I roasted aubergine, red pepper and pumpkin and then put it on top of the quinoa, mushroom and black beans which I had mixed together and put homemade harissa on top of the aubergine and then put it all back in the oven for 10 mins.
I then drizzled over a homemade tahini dressing and added fresh corriander.
As with most of my meals I wasn’t sure when I started what I would end up with but this was so delicious I’d recommend giving it a go 😋
