Rhubarb in season now 😁

I made a rhubarb crumble tonight with some Rhubarb a friend gave me out of her garden. The only thing that puts me off rhubarb is that it is so tart that you have to add sugar. Instead of sugar I added 4 dates I chopped up into the cooked rhubarb to add sweetness and I think it worked very well. I didn’t put sugar in the crumble topping either πŸ‘

Here are the health Benefits of Rhubarb and Medjool dates.

Rhubarb contains a pigment called parietin, which has been shown in a few scientific studies to be a potent cancer fighter.

When it comes to vegan sources of calcium, rhubarb is a great bet. About 3.5oz of rhubarb contains nine percent of the daily recommended amount of calcium, and 5g of fibre.

Rhubarb is also high in vitamin K (which is essential for strong bones), vitamin C, iron and manganese.

Help maintain your potassium levels and sooth sore muscles with Medjool dates. By weight, they contain 50% more potassium than bananas. They contain 12% of the daily requirement for fiber, Medjool dates help promote digestive health and help prevent cardiovascular disease.

Ooh that sounds very yummy Ali and I wouldn't have thought dates would sweeten rhubarb enough. I'm going to have to try that as I love rhubarb, I may reap the benefits of medjool datesπŸ˜‰. Homemade raw fruit bars spring to mindπŸ˜‚

I love rhubarb Ali and sometimes I use date syrup for sweetening rhubarb and other tart fruits sometimes. I love dates too especially Medjool dates 😊

I remember from last year you love rhubarb and I think that’s what has got me into it. Date syrup is a good idea. I try not to use refined sugar as it messes up my sons voice so we avoid it where possible. I used to have date syrup so I will remember to get some more πŸ™‚
