My diet is 90% vegan or veggie based I used to be a huge meat eater when I was younger and very unhealthy now I am very much a plant based diet the odd bit of meat here or there . I don't claim to be vegan but I prefer the older I have got I just don't feel like eating meat anymore . I am struggling to get my stools where they are not hard . I eat on a daily basis dates nuts raisins and fruit I don't eat hardly any fats or saturated fats . I know nuts etc have fats in them. I am struggling to find a balance . I cannot eat any pasta rice and I hardly eat carbs like spuds but again I know you can get carbs from different foods .
I feel like I need an overhaul and am trying to find where I am going wrong . Any tips would be great .

green vegetables like cabbage and Brussels sprouts have a lot of fibre. Adding lentils to a dish will add fibre. Oranges and apples also contain fibre. Most fruits and vegetables contain fibre which is good for gut health and stools. Hopefully this helps?

May I ask why you are not having much fat ? Too much saturated fat is a bad idea but unsaturated is essential for a balanced diet. Most vegetables have carbohydrate in them . Sweet potato and broccoli are good sources.
A vegan or semi vegan diet is like any other. It should have a balance of all the food groups . If you want to have healthy bowels then upping your vegetable intake will help but make sure you have a balance . There is a lot of information online on a healthy diet, vegan or otherwise.
