I have coconut flour in my cupboard that I need to use up but not sure what to make with it. I have been looking online but couldn't find much. I am looking for recipes that are not full of sugar but sweetened naturally i.e. with dates.
Also there are these pancakes but someone has commented that they didn’t work out but from my experience maybe pancakes would be a good place to start.
I have to be honest, I found it difficult to get a good consistency with coconut flour. I think you have to add a third of the coconut flour you use to another flour like almond flour. It’s quite dense and soaks up any liquid or moisture and I never quite got it right so I’m sorry I can’t be off more help. 😕
Thank you Ali and really appreciate the links. Funny thing is that I've just sat down this evening and I've received an email with a link for a recipe for bounty style healthy raw bars using coconut flour. Therefore with the links you've given me and the bars I should use it up.😀
That’s good. Maybe post your bars....That’s reminds me that I made bounty bites once. I might give that another go. It was with desiccated coconut. Good luck with yours! 🙂
