Coconut Flour Bread (Vegan and Gluten-Free)

β€’10 Replies

Hi all

I wanted to try another gluten free bread recipe that had no yeast as I have a sensitivity to both. I am pleased to say this one worked and I'll be making it again, I doubled to recipe to make 2 loaves.

I also added some garlic powder, Hidden 's idea from another post of mine, and dried Italian Herbs. I've just had a taste and it tastes lovely. I'm going to try sun dried tomatoes in it next time.

I made my own mix of flours using 2 cups white rice flour, 2 cups brown rice flour, 3 cups tapioca flour, 2 cups cornstarch and 3 tablespoons of potato flour. The flour mix makes quite alot so the rest is stored in the fridge for next time. You just need to mix the flours well until combined.

Happy baking allπŸ˜€

Hey well done you Alicia, it's great news that it tastes good as it looks really good and very wholesome. I think that your flour mix is really good as it's a multigrain so with sun-dried tomatoes herbs and garlic I'd love some.

Happy baking indeed...😁

Thank you Jerry, I aim to eventually have a gluten and yeast free bread as close to normal bread as possible.πŸ˜€

Hi Alicia i think this is great and I’m glad this worked out for you. The information you are posting is invaluable to someone in the same situation as you. So well done as I don’t think it can be easy to make bread with no gluten or yeast. It looks great and now you don’t have to miss out on tasty homemade bread. Well done Ali πŸ™‚πŸŒ±

Thank you Ali for your encouragement. Unfortunately when I took the bread out of the freezer this morning I realised it was more undercooked than I initially thought so I'm going to have another go and cook it longer than they say.

I think it's still a good recipe, just needs tweaking. I received my order today if Buckwheat seeds so I'm going to make more of that bread and flavour it with sun dried tomatoes and herbs.

I'll get there and have the perfect loafπŸ˜€

Thank you Zest, a bit undercooked so I need to have another go.

Looks lovely baked some wholemeal bread yesterday too! Might used that recipe link you provided.

It's a good recipe but does need a little tweaking as it can come out as undercooked. I would cook longer than they suggest.

Honestly, you can do the same thing but come up with different results. πŸ˜‚ I'm really pleased that one worked for you.πŸ˜€
