We had lots of celery in our veg box this week and after reading about the benefits of celery I put it to good use and made this healing soup πŸ₯£ ok, it’s very green but green is good in my book πŸ‘ I like it to be thin but if you liked a thicker heavier soup you could add potatoes.

It has lots of celery, an onion, kale, garlic, ginger, chilli, miso, turmeric and black pepper. I sprinkled a mixture of ground cashews and nutritional yeast on top πŸ™‚

Here are some of the benefits of celery.

Prevents or Treat High Blood Pressure

Helps Prevent Ulcers

Protects Liver Health

Benefits for Weight Loss

The soup sounds lovely Ali, I think I will try this one. I must admit I really don't like celery but because of such health benefits I do try to have some, it is also my source of Selenium to help my Thyroid : >

Oh in that case it would be great for you. Maybe add a vegan cream to cut down on the celery flavour and make a creamier soup πŸ™‚

I'll have to look at eating celery. I don't like it raw but have added it to recipes and that's fine as I can't reallh taste it.

I didn't realise it it contained so many nutrients.πŸ˜€

No neither did I. I am always looking at the nutrients of things as it is so amazing what nutrients are in things that may seem insignificant. I find it interesting. Like when I posted the benefits of chestnuts. I was amazed and people just trampled on them and walk by, saying that they are a nightmare to get into!!

It's amazing what's in our foid and we don't know it. More needs to be published on the benefits of certain Vegan foods.
