Here's some biscuits I've just made and I used plain gluten free flour with coconut butter (creamed coconut) coconut sugar, currants, soy cream, chia seeds and mixed spice.
I use chia seeds as they not only taste good, pack a nutritional punch but they help bind foods as they absorb 10x their volume of water I also used soy cream rather than coconut milk as its high protein helps bind them too.
When I make biscuits I don't roll them out and cut them I use muffin trays and just put a spoonful in each section as its easier and I like the rustic look this gives them. Jerry π
