Was due to have my 2nd jab last week but the surgery cancelled due to staff sickness. Am booked in for Monday but feeling like I have a cold starting. Hence I may need to reschedule. Am at the very end of my 6 month window for this jab, and my question is how much does that matter? What happens if I get it done at say 6 months and 3 weeks? Obviously I need/want to get it done (despite the awful side effects last time) but getting worried about the timeframe.

If you are late for your second Shingrix dose (i.e. it has been more than 6 months from your first dose), it is recommended to administer it as soon as possible and do not restart the vaccine series. There likely will not be any appreciable loss in its ability to protect you from shingles.
It is unlikely to make a difference - you will be getting it within a few weeks.
