Bread, and friendly Endo

Please could anyone PM me names of any Thyroid friendly Endo's in Northamptonshire?

Also, can anyone suggest a gluten free bread that does not taste positively awful?

I can't suggest an endo, but you can buy nice GF bread from M&S, at a price. They do a sourdough loaf as well as a brown or seeded sliced loaf. Husband and I trawled through every commercial GF loaf we could find in the shops, but M&S were the best. I've since gone very low carb though, so I might be out of date.

I get on with Genius Triple Seeded Farmhouse GF bread. It's nicer when it's toasted but I can't grumble.....I don't eat a lot of bread anyway, just something to go with a bowl of soup or a piece with sliced boiled egg before going to the gym.

I have been gluten free for 10 years and whilst I long for bread I find the offerings to be lacking so we are currently doing battle with the new Dr Myhill recipe for linseed bread: just water, salt and freshly ground flaxseed. Sounds great doesn't it? The FB forums are awash with the few that can get it to do as Dr Myhill does and the many that keep failing. But from my experiments so far the crust that has cooked is fantastic, so worth persevering. You tube below for those with the energy. Linseed crackers seem more straightforward. Good luck on your quest.

I cannot get Dr M's recipe to work. I've tried every tweak I know from the days when I used to bake frequently. Must have tried it a dozen times now, but the result is always the same - good crust, but no rise and interior soggy. :-( I'm no longer on FB, so haven't seen the discussions you mention.

On one FB group swearing about the bread and even posting photos or discussion has now been discouraged! There were so many failure photos. The awful rate of failure is being put to her so we will see what they can suggest. I have seen some really good results with a dehydrator and linseed to make crackers so no cooking, but yet another price of kit to consider. I am now going to want to hear 99% success rate before I try any other recipes.

Anyone out there have any success with linseed items?

I've had success with other linseed recipes, but they contain additional ingredients, and aren't so quick to make. Happy to PM you some recipes, if you need them

I wonder if the wood-fired oven SM uses has some particular advantage? I can't think what it might be though.

I can't have eggs and am sensitive to all sorts so would love some ideas thanks. Ready to branch out but yes I think that the oven is key.
