Tofu isn't good, but a lot of the soy they eat is fermented, so that's ok.

Chinese soy sauce contains wheat so isn't gluten free but Japanese soy is wheat free fermented soy. Kikkoman or Tamari are Japanese brands.

I’ve been gluten free for years & used Tamari , but now have cut out all soy so use Coconut Enzymes - following the Thyroid Connection by Dr Amy Myers 😊

So how / why is fermented soy better ?

I’ve been reading the Amy Myers The Thyroid Connection book - it’s been mind blowing - I did the tough autoimmune 28 day regime & felt amazing after about 3 & half weeks . Muscle weakness Improved , shakiness improved, energy improved . She recommends no Soy , I don’t know enough about fermented or not , but I’ve now changed my TAMARI to Coconut enzymes for

Cooking as no soy in it 👍

Well, half the world eat fermented soy and most of Okinawa who are some of the longest lived people in the world so I see no reason to stop if small quantities. The problem in the West is people eat soy, unfermented and in products that contain large quantities and not in balance with other nutrients.
