I have terrible joint pain- low moods - irritability - massive weight gain - not particularly cold more anxious and sometimes hot palms -
My joint pain has got worse and I am piling on the pounds despite having a very poor appetite. My sleep pattern is awful - waking early and can't get back to sleep. My eyesight is less clear and I'm just feeling very low. Seriously gaining weight 😢

Diarrhoea and anxiety can be signs of over medication. Before self medicating I would order a finger prick home test from Blue Horizon or Genova via thyroiduk.org.uk/tuk/testin...
Dsdc When you say your Vit D is fine, what is your level? Joint pain can often occur when Vit D is low.
Poor sleep and anxiety can affect adrenals. Adrenals and thyroid work together. You might benefit from the 24 hour adrenal stress test offered by Genova to see if your adrenals need supporting.
As you have Hashimoto's (autoimmune thyroid disease) have you gone gluten free (possibly even dairy free) and are you supplementing with selenium, all of which members have found help enormously with reducing the antibody attacks.
You are probably under medicated as your symptoms all sound connected with hypo. You may, or may not just need an increase in Levo, you may, or may not, need to add T3. However, you won't know what you need until you have full thyroid test results. You definitely need FT4 and FT3 done at the same time to know if you need T3.
My suggestion is to get the Blue Horizon Thyroid Plus Eleven which will cover all your thyroid tests plus all the important vitamins minerals, make a new thread with the results and members can advise.
In the meantime, hold back on taking the T3 as you don't know if you need it, taking it when itnot necessary can cause you further problems.
Have you investigated food sensitivities? Some of the symptoms you describe can be connected to food intolerance. May be worth doing an elimination diet or AIP to try to work out which if any foods are problematic, gluten being the most common:
