Awesome healthy chocolate cake recipe :)

I accidentally invented this healthy chocolate cake recipe and felt I should share it with y'all. It is gluten free, grain free, dairy free and could potentially be vegan, oil free, and sugar free and soooo tasty!

You need:

100g dates

400g sweet potato

2 cups potato starch

3 tbspns cocoa powder

8 frozen strawberries

1 egg (or substitute, but I haven't tried- you have been warned!)

1 tbspn vanilla extract

Pinch salt

About half a cup to a cup dairy free milk

1 tbspn baking soda

Chocolate chips, nuts or any fun extras

1. Peel and chop sweet potato. Boil until soft. Meanwhile soak the dates and strawberries in a bowl of hot water.

2. Drain the sweet potato and fruit and throw everything (all the ingredients above except the last) into food processor. Blend uber thoroughly until the mixture is COMPLETELY smooth (or as close as it can get ;) )

3. Stir in extras and pour into a greased cake tin. Bake at 160 C for about 45 mins (check after half an hour - do the skewer thing - take it out early if not sure as it can get too dry).

Leave to cool totally and then devour like a lunatic. (Optional).

You can also swap the strawbs for raspberries or two tbspns sweetener like maple syrup or honey.

Sounds delicious, where would I buy potato starch? Do they sell it in health food shop?

I have a massive barrel of it which was bought in bulk from some weird company, lol. But I believe it is easy to find in smaller packages on amazon, some supermarkets and probably holland and barrett. Mind you don't get it mixed up with potato FLOUR - that is not what you want! I will see if I can find some on amazon and post a link :)

There are lots of other ones on there too, probably cheaper ones. I hope this helps. Its a useful thing to have, very good for the gut - its a probiotic.
