Healthy fruit and nut cake

Love this healthy fruit and nut cake. Super easy to make and full of nutritious goodies to support our thyroids.

200 grams ground almonds

500 grams mixed dried fruit (sugar free)

50 grams broken nuts ( I use walnuts and brazil

4 large eggs

2 tablespoons softened coconut oil or butter

Juice of one orange

2 - 4 tablespoons raw honey ( depending on how sweet you like your cakes )

Tablespoon probiotic natural Greek yoghurt

Half teaspoon bicard of soda

2 pinches pink Himalayan salt (sea salt will do)

Beat ingredients until they bind well

Bake in a moderate oven for 30-40 mins

Should be golden on the outside and slightly squishy in the centre.

Use organic ingredients when you can.

Sounds delicious. I would try but keeping weight off is difficult for me, I'm sure others will be most appreciative Citta.

Thank you! I might be able to use that as a Xmas cake - I'm gluten and dairy free so any cake making is a challenge. I'll substitute the milk yoghurt with coconut yoghurt. :)

Great idea! It tastes fabulous and you could add spices to it if you like. It freezes well.

Ooh lovely, yes I do like a good dollop of mixed spice. With the mother-in-law coming to stay at Xmas it'll be nice to have something like that to offer. :)

How do I measure grams for fruit and nuts?

You can buy bags of mixed fruits in 500 g bags. I buy the 125g of nuts and use just under half to make 50g. Thevamount of fruit and nuts you can vary according to taste. Keep the other ingredients per recipe measurements though. Good luck and enjoy 😊

Citta - what temp would a "moderate oven" be ? - I'd love to try this delicious [and easy!!!] looking recipe but would hate to ruin the hard work by not getting the oven temp right! Thanks for posting.

Ohh I have all those ingredients, I feel some baking coming on this afternoon.

It looks lovely, but I have been making the same fruit cake for over 40 years and it's perfect.

Yours, of course. is more healthy but I don't usually eat my own anyway.

Citta , I have made your beautiful delicious cake several times, in fact I have one in the oven as I type. I usually put the cake in numero 6, but find it often needs a little longer. This year I made one as our Christmas cake and marzipan'd and iced it. Absolutely Fabulous! Thank you. (I use Waitrose Vine fruits without added sugar, so plump and juicy).
