For those of us who are gluten/soya/dairy/ intolerant... Something comforting to bake, my modified recipe as requested...

In these difficult times for us folk who have so many food intolerances, it's even harder to find something nice to eat that doesn't hurt us! Apart from calories of course!

Although this recipe includes almonds for this who are tree nut intolerant, the almond flour can be substituted with dessicated coconut, as it is classified as a fruit... Unless you are also allergic to coconut that it.

Here it is!!! Pamper yourself.

Formula for the Polenta & Almond Cake with Orange Zest.... converting it to Chocolate/Orange if desired! It's an option.

It's TOTALLY gluten/dairy/soya/ FREE.

Container required is Small loaf baking tray.

Ingredients;

* 100 g Ground almond flour.

* 100 g Polenta

* X2 tablespoons cornflour or rice flour

* X1 teaspoon baking powder

* X half teaspoon bicarbonate of soda

* Pinch of salt to taste

* Zest of 2 oranges.

* X3 eggs

* X3 tablespoons of honey

* X2 teaspoons vanilla extract

* 50ml of Agave

* 50ml olive oil

* 120ml almond or coconut milk.

Heat oven to 180 'C / 350 F/ Gas Mark 4

Use 2 large bowls.

Add all dry ingredients together... into one bowl.

In the other bowl add all the wet ingredients... Whisk all together, to make it nice and frothy...

Prepare your baking tin; line it with greaseproof paper to be on the safe side, avoiding contact with Tefal surface lining.

Add the frothy mix to the dry bowl mix and whisk/ stir....adding in the orange zest

Pour the mix into the greaseproof paper lined tin...

Cook for 30 mins minimum recommended by the book...

Preheat oven a little... Put down to gas mark 4 when you pop the cake in.

You might like to cook it for a little longer..check it after 30 mins with a knife... I personally go for 45 mins total time.

You can also add chocolate to flavour it.

I use 3/4 of a full tablet of 70% choc!! Melted 'au bain mairie'...a little pyrex bowl floating in a pan of boiling water.

If you choose to add chocolate flavour to the orange zest...When fully melted add it to the frothy mix...

WARNING!

This cake is so good, you will become addicted!

Ha ha ha...but when you've got so many food intolerances, it's such a joy to be able to eat something so delicious knowing you are safe!

I know exactly how you feel. I have 17 "known" different food intolerances. I have to 'remember' tastes and flavours! Sadly... In fact my reduced food options have even made my GP think I could be even be risking malnutrition! And then when I'm unlucky enough to poison myself inadvertently and swell up to the size of a beached whale... people think I'm fat 😠😠😠.... Or when your in-laws invite you to a bash and you don't dare eat a single thing and they say to you... "Oh I thought you'd got over that!" Aagghhhh!!! Do people get over peanut allergies, I ask you!!!!!.... I know my partner's mother thinks I am attention seeking with my food, she's pretty much said it!

Anyway Ignorance is indeed a Sin!

And with that I'm off to back my polenta cake for my neighbour as a thank-you for going above and beyond to get the things I need to eat.

I've just measured the base of mine, upside down and it's approximately 9 X 20 cm. It does rise, so I don't feel comfortable using a smaller tin increase it splurged over!!

It's very very delicious. You will adore it!

It's really comforting and very scrumptious!! And the orange zest Smell with the vanilla essence !! Hhmmmm and you can add chocolate to it too! Golly no wonder Juliette Binoche made the film Chocolate....apart from having those equally delicious Jimmy Choo red shoes to wear from 'wardrobe'.... Oh dear, what a hardship!!

My chocolate experiment was positively Devilish!!! Imagine further experimentation with a little drizzle of Cointreau soaked into it on your dish! Ummmm yum!!!
