thank you for the link.Have bought coconut flour & almond flour on Ebay.The recipe link you posted is great,because I want to make a cake with oil & honey,not butter & sugar

Hi Naomi8, Oh good for you, hope it works good, looks lovely, I can't eat any carbs, but I know that my kids will love it. I will use butter cream and jam for the middle, and just a sprinkling of icing on the top, so the icing sugar is not so healthy, but will only use a smidgen.

Let me know how yours turns out, and what you used for cream, or maybe, I'll just use pure whipped double cream and squashed fruit in the middle, that'll be healthier. Give me your ideas please, great to pass on tit bits of knowledge.

Hi again Naomi8, not convinced on using almond flour mind, almonds are on our nono list of foods. Have a look at this link, obviously it's your choice, you may be fine with it.

Oh no!Not another thing to worry about!Have you tried coconut cream?I buy it in a UHT carton,but so far have only used it in savoury,mild curry dishes.Wondering if it would make a cream filling for a cake.I made a delicious filling with cream cheese,honey & vanilla extract,but I have to really watch the dairy & won't be eating that again.
