goose, zinc deficiency in children lowers IQ by 10 points. It's really tragic that if you compound it with iron deficiency (10 points) and iodine deficiency (15) points, there's an awful lot of children and adults who are functioning much lower than their potential.
Diet is important. And if the diet is not providing adequate amounts of nutrients (protein, B12, iron, zinc, iodine) then it needs supplementation. Protein is also a problem when people decide to go on vegan and vegetarian diets without doing their research into what it all involves. Proper preparation of foods for these diets is time consuming.
Legumes (pulses) need a good soaking before cooking in order to minimize phytates. Traditional diets which include these also include soaking. And with many whole grains, they need fermentation to reduce anti-nutrients. Fermentation (sour dough) also reduces the amount of gluten. Fast raised bread dough contains much more gluten than traditional sour dough.
Going vegetarian or vegan is not for amateurs.
I totally agree with you there! But, in my experience, people tend to just rely on soy products, thinking they are health foods.
I love sour dough bread, but have never tried making it. You don't happen to have a sour dough recipe for idiots, do you? lol

There are limits. I cook. Baking exceeds my 'talents'.... I've baked bread in the past and it was rather, um, crunchy.
I used to have a bread machine, and it made lovely bread! Perfect. But, after about 10 years, it gave up the ghost and I had to buy another one.
Whilst I was sad to lose my old friend, I was excited to see what improvements technology had made to bread machines! I ordered one that made jam, cakes and baguets! Except that it didn't! Well, not for me it didn't. I cannot describe the dire results I got from the jam and cakes, and the bread looked ok but the texture was revolting! Even though using the same ingrédients as with the old machine.
After a couple of months of struggling, I gave up and sold it to some other unsuspecting soul. (Sorry, unsuspecting soul but...) I haven't made bread since.
