Spelt Sourdough Bread contains low Fodmaps. Has anyone ever made it with a bread machine or does anyone know of a store or bakery that sells it?

Spelt flour, I recall made by Doves can be bought most big supermarkets but certainly Tesco. I use a Panasonic breadmaker set on the gluten free setting which is a 2hr bake and produces a most appetising loaf. After several months of spelt bread I reverted back to a 50/50 brown/white normal flour mix which is IBS friendly for me.

Dud you make sourdough spelt or regular spelt bread? Where do you live?

I make spelt bread in a bread machine using yeast. I use Dove's Farm white flour & also wholemeal flour and make a 50/50 mix. I follow the white recipe on the back of the packet.

I'm happy to provide you with the recipe if you can't find one but I don't have sourdough because of the long fermentation process. Are you not able to have yeast?

Spelt sourdough is listed as low Fodmaps. Something about the fermenting process reduces Fodmaps. I would love to have your recipe though, I'm missing bread! I can't have Xanthan Gum or any other gums, can't have chia, flax or psyllium seeds. Thanks!

Here is the recipe:-

1 tsp quick yeast, 500g White Spelt Flour (or 50/50 with wholemeal), 1/2 tsp salt, , 1 tsp sugar, 300ml warm water, 1 tbsp veg oil. I add to the bread machine in the order listed and use the dough programme. I then turn out onto a floured surface, shape and put into a loaf tin. I use a knife to cut all the way along the loaf to help prevent baker's tunnel which is a big air gap which can occur when it cooks. Leave at room temperature for no longer than 20 mins as it rises very quickly then bake for 20 mins at 180C in a fan oven. I turn it round after 10 mins to give a more even bake.
