Veggie curry with black rice, (vegan)
(Anthocyanin is anti inflammatory and is what gives it its colour, dark purple) I used, chestnut mushrooms, leek, red onion,
garlic
, chilli, sweet peppers and sliced rainbow chard. I lightly cooked all the veg in a little virgin-olive oil and added turmeric, ginger, coriander and cumin.

Hi have 'made up' my own pot for tonight and have added some sweet potatoes, onions (frozen ones as I cry so much when peeling onions), leeks, a yellow and red pepper, fresh basil,

, carrots, beans, tomatoes, cabbage, celery, potatoes, peas, sweetcorn. Topped off with spring onion and a small grating of cheese to garnish. 2 wholemeal pittas and I am sorted. Here’s to batch cooking!!

You cook quinoa and add it to chestnut mushrooms onions,

+ veg, herbs, that are gently fried in olive oil. Then add coconut milk and tapioca starch and bake. This gives it a very interesting texture. I do like how quinoa has these little curls when its cooked...😊

Slow Cooker Curry
I have made a pot of curry today with carrots,

, medium curry powder, lentils, chick peas, kidney beans, tomato puree, passata and pure fructose syrup for a bit of sweetness. I am really looking forward to eating this as curry is one of my favourite foods.

Bad breath through nose
My diet consists of
