Hi everyone, I hope you are having a great Thursday!
This week I wanted to share with you a recipe I intend to try after having the most amazing dessert this past weekend. My husband and I were lucky enough to escape the city for the long weekend to the beautiful scenery of North Wales (I had never been before!) and I fell in love with it. On our first night we went a cozy inn and had the most wonderful honeycomb cheesecake. I have been thinking about it all week!! BBC have a similar recipe so I am going to give that a try here bbcgoodfood.com/user/424067.... It was so nice to be surrounded by the incredible forests and lakes and beaches in North Wales and I hope we get to go back sometime soon.
How was everyone else's bank holiday/what are you doing for this week's bank holiday if you're in the states? I hope everyone is doing ok despite the reported increase in the number of cases in the UK. Hang in there everyone!

Omg your neighbour is wild!! That is so cool! Do you get those kinds of visitors often? I absolutely love that! It must always be so interesting to live in the countryside, I hope you continue to enjoy it. Thanks for sharing your fruit bread, as always, your bakes look incredible! Wow Sadie, That looks so sinful but so delicious! Great to get out of the city for a while and N Wales is the perfect antidote to city life. Was the weather OK. It was pretty dire here for most of the bank holiday weekend and mostly because of that, I hibernated at home and did some binge reading on my Kindle, flitting from book to book in the way that you can only be bothered to do on an e-reader!
Hi! We actually really lucked out with the weather! We had two days of sunshine to go hiking and swimming in the lake (though it was freezing!!) so I can't complain! Hibernating with a good book is just the best, that's what I've wanted to do all week.. I'm so glad you could enjoy that! It truly feels as summer has gone!
