This week I have been dreaming of travelling and have been reminiscing of some of my favourite trips. My favourite one by far was our honeymoon to Sri Lanka last year. We spent two weeks exploring the towns on the south coast and ate some of the most incredible food and met some amazing people.
A dish that I think of often, but isn't incredibly Sri Lankan, was a superfoods bowl that I had as a late breakfast when we visited the town of Hikkaduwa. It was full of so many healthy and tasty things I thought I would try to recreate it this weekend. Here is a picture of the one I had on my trip - full of sweet potato, avocado, hummus, beetroot and so much more. I love the colours and love how filling they are! I'm going to try to recreate it using this recipe fitfoodiefinds.com/sweet-po... even though it's not quite the same.
With good weather tomorrow, maybe I can pretend I'm back on the beach in the sun!

Hi Jerry, Iced coconut drinks sound perfect to go with this! What a good suggestion. Your potato dish looks delicious, as do all of your meals. I hope you're going to treat yourself to something nice and refreshing in the warmer weather. Hope you have a lovely weekend too!
We went to a sri Lankan restaurant last year and enjoyed it there and the food is quite spicy!
Today for lunch I have had a smoked salmon roll, bowl of mushroom soup and some fruit which I have enjoyed and a walk with my friend in the park having a mint cornetto and a drink which was hot but enjoyable!

I have enjoyed some Thai green curry this week - it turned out really well in the slow-cooker - delicious, and as you can also see I've had a slice of decadent cake to help a friend celebrate her Birthday. It just had to be done.
