This week I have been dreaming of travelling and have been reminiscing of some of my favourite trips. My favourite one by far was our honeymoon to Sri Lanka last year. We spent two weeks exploring the towns on the south coast and ate some of the most incredible food and met some amazing people.
A dish that I think of often, but isn't incredibly Sri Lankan, was a superfoods bowl that I had as a late breakfast when we visited the town of Hikkaduwa. It was full of so many healthy and tasty things I thought I would try to recreate it this weekend. Here is a picture of the one I had on my trip - full of sweet potato, avocado, hummus, beetroot and so much more. I love the colours and love how filling they are! With good weather tomorrow, maybe I can pretend I'm back on the beach in the sun!
