This week I wanted to share with you a different take on the classic carbonara. Again, from Jamie Oliver, this recipe swaps the cream based sauce for a version with yogurt and peas (and still with bacon)! I don't really like calling anything 'skinny' but that's what Jamie calls it. You can find it at jamieoliver.com/recipes/pas.... I enjoy this version very much - I love the peas pulsed with garlic and flaked almonds, it's SO GOOD. I usually help myself to more than one portion..
What are you all cooking or baking this week? Has anyone ventured out to a restaurant yet? I haven't, I think I will wait a couple more weeks, but I do really miss my local for an amazing Caribbean dish.

Thanks so much for your kind words every week, Jerry As always your bakes look incredible and so do your neighbour's! My neighbour made me some lovely gluten free rice krispie treats (I think they're always gluten free) and I loved them! Hope you have a lovely rest of your week as well!
That looks lovely and peas are a nice change as well.
Being half Italian I often cook pasta dishes and make carbonara when short of time. My version is just olive oil, garlic, bacon, beaten egg and Parmesan cheese. I sometimes add frozen peas to the spaghetti about a minute before it’s ready then drain it. The humble pea is now recognised as a superfood.
I’ll try your recipe as I like the sound of using almonds and yoghurt with the peas. One of the easiest pasta dishes is spaghetti pesto. You can use a jar of Italian pesto on its own or add more oil, pine nuts, fresh basil leaves and Parmesan. It’s my granddaughters favourite and she likes it with gnocchi.
Last night I made lasagna with bolognese sauce, bechamel and mix of Parmesan and cheddar. I added a fried aubergine and it was delicious. The lasagna sheets were Sainsbury’s fresh egg ones and they are very good and just the right size for my dish.

I do quite a lot of baking.This week I made a banana loaf to use up some ripe bananas.I have got the Hummingbird Bakery book and they have the most fantastic recipes.Their chocolate brownies are the best I've had although theyre a special treat as they are overloaded with fats and sugar!
