Try new food Thursday - Butternut squash and pancetta risotto

Happy Thursday everyone! How is everyone doing? I am a mix of exhausted, excited and nervous as I'm going into my last 5 weeks of pregnancy! I feel like I still have a lot to sort out, but I am too tired and uncomfortable to do much. I am really looking forward to the run up to Christmas to hopefully relax and have a bit of time to myself before our lives are turned upside down (for the better!) I hope everyone else is managing to find some positivity in the midst of the new lockdown or whatever restrictions you may have where you are.

We have been having so many carbs and comfort foods recently as the days get shorter and colder. This week I wanted to share with you a delicious risotto we made earlier this week! It's from Jamie Oliver and has butternut squash, pancetta (we used bacon), sage and chestnuts! If you want to try it out you can find it here: jamieoliver.com/recipes/ric... . I really liked it and look forward to making it more this winter :)

Hi Jerry! Thank you for your very thoughtful words, you are very right! It will be amazing when we can all see our loved ones again and know it will be when it is safer to do so. Your banana and coffee take looks absolutely delicious! I hope you have a lovely weekend and are able to make and eat some more treats

This week we have had rib eye steak last night along with sweet potatoes and carrots and Monday night was jacket potato and tuna.

Tonight it's haggis, neeps and tatties here!

wow SadieHU, the time's been flying! No wonder you are so excited and in great anticipation now. You might find the last few weeks dragging a little more, just because the big event's approaching and also because pregnancy becomes a little more uncomfortable. While waiting what better than a lovely risotto. Comforting and easy to eat. Really delicious. 👍😊

thanks so much for your kind words, we are definitely finding these last few weeks going much slower! luckily we have Christmas to look forward to and it is my favourite time of the year :) I hope you are keeping well through all of this and hope you have a very lovely weekend!! 🥰
