Hi and good evening everyone.

Tonight, I had homemade hummus, stuffed grape leaves (filled with rice), 2 dried apricots, gluten free crackers and a Greek yogurt for dinner. Everything was 58 carbs. and was great for a warm Spring evening. Very filling and delicious!πŸ˜€πŸ‘

Hummus is very nice, I usually have it with carrot sticks. Dried and fresh apricots are delicious. It sounds like a flavoursome dinner. 😊😊

I think you should come to our house, and bring your recipes. We will fire up the bread oven and cook and eat till we gain 5 pounds, then go on a long bike ride.

You probably don’t want to get on a plane though, unless you can sit outside.

I live in an area that everyone is from somewhere else. I have a multi cultural group that just lives on my street and I have coworkers from different countries. I haven't had a chance to see them, but we do lots of e-mail to keep in touch. :-)

lunch yesterday was hummus, celery/ nut/ mayonnaise , tomato, spinach mixed salad, beetroot, celery, red pepper, with a slice of turkey and a seeded brown Tesco GF bun, and a dab of butter. Very tasty. I have recently developed an intolerance to lactose so I have to watch out for lactose free products. However there are a lot of lactose free products available now. How do you make your hummus?

I had stuffed grape leaves at a restaurant once and loved them so much I tried to make them at home, but failed to recapture that delicious slightly tangy - probably vinegary - taste, and cannot find a good recipe. Can you please list the ingredients for the filling ?

Today for lunch, I had quinoa with artichokes and red peppers mixed together. Really good! I also had a Greek yogurt on the side.

The tangy flavour was probably lemon. Greeks use a lot of lemon juice in their cooking.

Sounds like just the sort of thing my dear old Mum used to make as she was Greek. Dolmades (the stuffed vine leaves) are one of my favourites. Well done making them - they can be a bit fiddly. Glad you didn’t post a picture of them I’d have been salivating! πŸ˜‚πŸ˜‚ Take care. πŸ€—πŸ˜˜

what an adventurous culinary soul you are...The last time I hadd vine leaves stuffed with mince and rice, was xmas 1996, my BULGARIAN friends were cooking...Ever since I cannot eat anything stuffed. The original. I don't like extra flavoured humus. I made it myself years ago & I put too much garlic in it. & it was so horrible I vowed NEVER to make it again so now I buy it in its tub

Different brands that make the original hummus sometimes do it differently and doesn't take as good. I learned this a while ago before the COVID 19 started. It's amazing what you learn when you're home! :-)

That sounds delicious Leah. As soon as I've finished the low fodmap diet I'm going to make some hummus (I'm pretty sure I don't have an issue with chickpeas). πŸ˜‹

I discovered a slow cooker! I just stick some veggies, spices and potatoes and whatever in. And by the evening its a delicious bubbling stew!

Low calories and super delicious.

Dumb question here: how do you make homemade hummus? Isn’t that crushed chickpeas? And, is there anything else, besides rice, in your mixture that you use to stuff in your grape leaf? Or could you use both rice & hummus to stuff in the rice. And, if you’re thinking β€œshe’s asking the dumbest questions” I am & thatβ€˜s because I seldom to never cook & do not know anyone to ask. I see hummus at the grocery

store but have never bought it. 🧐
