Hi everyone. This is what I had for last night's dinner and as leftovers for today's lunch. With dinner last night, I had a side salad with light Ranch dressing. For lunch, I had a Greek yogurt. Everything was really good and all the flavors mixed together very nicely overnight.
The tortillas are made with corn and the cheese used was 6 blend Mexican-style. Really good.
What did you have for lunch and/or dinner?

Hello that looks and sounds really nice my tea was a bit of disaster warned up meat pie burnt under grill lol but my home made chips were nice I've only recently started eating bit of meat but I feel 2 days in a row isn't for me mam made some pies yesterday I had a plain omellete on a breadcake for lunch with avacado on the bread lol never had that before it was lovely ππxc
That really sounds good! I love eating avocadoes with salad and other food. We're getting some avocadoes in a few days from now. An omelet sounds like a great idea. My mom and I were talking about having them in a few days, but we have to see if we have everything we need for them.
I have 3 big ones left after they've gone that will be it for a while I can't see us getting out hull my town is critical now it's on news asking for urgent action, so we're using what we have in but it's good to try unusual concoctions I'll have to start baking too to pass time and more nice food to eat I'm hoping to try them peanut butter buns we have that in π
Yes it was your recipie I did a screen shot but just realized I no coconut I bought a pack of raspberry sponge coconut little buns other day I've still got 4 left πlol I'm lazy at moment I used to work as a cook and as living at mam's I just leave her to it really she cooks I eat it lol, 2 many cooks spoil the broth, and with pixie guarding the oven you can imagine, but good news I have another house viewer tomorror as my house is up for sale hope you have a good night not sure what time your on I'm sleep soon πππxx
It's 4:35 pm here right now, but will have to check to see what's for dinner tonight at 5 pm so we can eat at 5:30. No worries. You can always reply anytime you're ready and free. I pick up replies after dinner usually if I have my phone nearby.
My dinner today was a bit disappointing because I'd cooked a spare jacket potato for my dinner tonight yesterday and my daughter and husband had it with their Sunday lunch without my knowledge. So, I only had a feta and cheddar cheese salad for dinner. To compensate I ate the very last slice of Parkin with double cream, yum!
That reminds me of what my dad sometimes does around here. If he doesn't want something we're having, he has either oatmeal or some other type of cereal and tea on the side. My mom and I have whatever was planned and we sometimes get to share the leftovers for the next day or one of us has the leftovers and the other eats something different.
I did a Sunday roast but I'm not a big meat eater and don't like Gammon at all so, I make something different me. I had a jacket spud with butter and cheese and cooked an extra one for my dinner today knowing that I would be making a meaty meal for tonight's dinner. I made a sausage casserole with high meat content pork (97% meat) but I don't like pork hence the ready cooked spud.
No, not really unless I make something with Quorn. I will make a spag bolognaise for the whole family from time to time.
What lovely flavours Leah, I bet you did enjoy that. I had a low fodmap curry and carrot soup which was lovely. I seem to make a lot of soups now.πππ
Your meal looks very nice. I'm glad you enjoyed it.
I had smoked haddock and poached egg on wholemeal toast for lunch, and a spinach pasta bake made with slow-cooked Thai-style chicken curry and cheddar cheese for my evening meal, which was very tasty.
Your lunch and dinner sound really good! One of my favorite types of food is Thai and chicken meals. There's a chicken, carrot and potato stew-like meal that my mom does sometimes for the holidays and it's really good, too. She adds some stewed tomatoes so their juice gets on everything when in the pot cooking. It's really good for cold weather nights.
Your Mum's stew sounds really tasty. I also used tomatoes in my Thai-style chicken curry - I used a tin of tomatoes in their juice, and it definitely enhanced the flavour, as well as providing lycopene - so healthy!
That sounds fantastic to me! I was thinking of a sandwich if we didn't have the leftovers from last night, but we didn't have all the items that I was going to use (tuna and some lettuce).
Chcken casserole. And that was leftover from Sunday lunch. Deliberately did enough for two days, as I also do with with stews, as they always taste better on the second day. Even did it with cottage pie last week . Being innovative during lockdown and cutting down on the work.See nowt wrong with that!
As I have cooked a lot recently and it is nearly Xmas my husband said I have to eat to empty the freezer. So I do not have to cook for at least 2 weeks.
Well, this sounds like a plan to me! We plan to go to my brother's (hopefully) for Thanksgiving and get leftovers from him like a few years ago. He always does this for us-- especially with the gluten free items so I can have leftovers for a few days afterwards here at the house.
