Today for lunch, I had leftover homemade hummus mixed together in tuna and a Greek yogurt on the side. Everything was really good and the homemade hummus was thicker than a few nights ago. The total carbs. for the entire meal was: 24. Nice low carb.-high protein meal that is also quick and easy.

It sounds like a lovely lunch. As you might know I am a veggie but I remember I liked Tuna. I remember my last Tuna meal 40 years ago being, mushrooms, slightly cooked with some oil in a pan. Then a tin of chopped tomatoes being added and heated up with the mushrooms, then a can of Tuna being added. I remember it being something quick and easy to make in the school lunch hour when you could go home, for me and my friends. We would lap it up with bread before returning to school for the afternoon. You post just reminded me of it. xx
You're welcome! Glad you enjoyed it. You can try it with different flavors of hummus if you like adding olives and/or red peppers. I sometimes add the roasted pine nut and other flavors of hummus when I don't have the ingredients to make my own hummus.
