Low carb eating to control blood sugars (aka glucose levels) while on steroids crops up often in posts. As a basically lazy, CBA person, these look quite 'quick and easy' and have 'How to' videos😆 so might spur me on even . Please add any other links you think might be helpful to others. I need to try some new things instead of same old same old, I'll add that to the New Year resolutions list. I've got loads of keto and low-carb books I just need to actually read and use them and try some new recipes
PS thanks to pammy_hyland for telling me about ketokitchenlytham.co.uk which delivers ready made keto (very low carb) dishes to you door which I'm going to stock up on and have in the freezer for when I really CBA cooking and planning. I'm inspired to have another go at keto in mid January

Hahaha - low carb lasagne made with aubergines. It's called moussaka - and I make the topping with an egg beaten into a small tub of Fage Total yoghurt which makes it even more delicious. To improve it for CBA cooks - you really don't need to salt aubergines these days, they are bred to be not bitter and you can cook the slices in an airfryer without the effort of a frying pan.
I slice courgette lengthways to replace lasgana too, they do need a bit of a toast on a grill pan to look a bit less pale but not essential.
What potatoes? I have never before seen a moussaka recipe with spuds - I have now to be fair!!!! Seems to depend where in the region the recipe comes from.
I live across the street from a large fresh food market ( not supermarket ) and the Greek family there prepare their moussaka with thinly sliced potatoes on top of the egg plant and under the topping . Probably there are regional variations, but the inclusion of potatoes is not uncommon.

Can't understand why anybody would want to eat an aubergine. Even if I liked them they're high histamine so couldn't. I have to adapt most recipes to avoid histamines, even though the Cimetidine really helps stop reactions most of the time. One thing I still can't eat is chickpeas, again high histamine, but I really like and miss hummous. But as the saying goes, I like it but it doesn't like me ... (old people like my gran used to say that about a lot of things when I was young, particularly cheese)
I once saw a book in a bookshop tiled 'Be @rsed!' I wish I'd bought it now but at the time thought I'd got more than enough self-help books and still have. Hard to believe I used to teach Time management, amongst other things.
One of my NY resolutions is going to be to try one new recipe per week. Seeing as I have hundreds of cookery books gathering dust (CBA dusting these days either 😆)
the best source of low carb recipes...chatgpt....give it the ingredients you have/want to use and it will give brilliant recipes..totally original! You can ask it to remove or add ingredients or modify the recipe in any way.
by the way, you don't need to go keto to have a low calorie diet...the benefits of keto are not completely clear...and long-term studies haven't been done.
I can't say that I am a big fan of full keto, I very much doubt that I could stick to it as I find it too punishing and I'm not sure that I am convinced that it is good for you long term. It's usually only recommended for 12 weeks, even when used in trying to reverse Type II diabetes. Though I think that some of the ideas can be really useful in offering alternatives to high carb meals. I do have low carb recipe books, but I've never looked at them as I rarely follow a recipe anyway. I find that avoiding foods with added sugar and white starchy carbs is sufficient to keep me in the low carb range. Just cutting out added sugar was enough to get my pred munchies under control within a few days.
I think the same about keto, but it would be good to try and do for 4-6 weeks to kick start me again. I still haven't got round to using Chatgpt or any AI. A friend recently told me he'd asked it something like 'how often should you change your socks?' and it said every 6 months. Presumably it got confused between change as in wash and buy new ones. Another friend uses it to make up stories for her grandchildren. She asks it to write a story with unicorns in with a happy ending or whatever and it does. another thing to put on my To Do list for next year.
There is a company called Carbzone that make low carb'tortillas, pasta etc. Some of it is horrible, but the tortilla wraps are fine for lunch for me. The pasta can be hit and miss but they do lasagna sheets which I have broken up when making stew type meals. I absolutely hate all low carb breads, but this company do a low carb rye type bread that isn't too bad.
I also have ordered the keto kitchen Lytham cakes which need to be put in the freezer and one taken out when you fancy it. I have those with yoghurt, seeds and berries.
Have tried their meals too but I don't have the freezer space. All low carb stuff needs to go in the freezer if you're not going to eat it within a couple of days or it goes mouldy.
There are people on YouTube who do low carb meals that I have tried too
I have a book in my kitchen and if I like them I write them in there.
I've tried those wraps they are nice but pricey - I note Morrisons now offer a cheaper version but haven't checked the ingredients yet. I am going to give the Lytham keto people a go in January but like you say I need to clear the freezer of Christmas clutter first. Good about the bread as that and potatoes are the two things I really miss when I cut carbs. I have a lovely book someone on here recommended and I wish I could think of the name now to credit her, its he vegetarian low-carb cookbook by Rose Elliot (if you're reading this Rose Elliot fan please remind me it was you).
I’m going to try the keto diet again, too! Last time I lost a stone in 6 weeks, but it was hard work…keto for me, different food for hubby! Plus he usually cooks our main meal, as I’m not well enough (sickness other than PMR) to cook! Probably beginning of Feb, I hope. Due to get some medical help in January! Thanks for posting, S x
Let's buddy each other along next year then. I won't be starting until the 3rd or last week of Jan, too many distractions early January to blow me off course. I find I need to be at home and stable and not stressed or depressed to really get into the flow. There's never a 'good time' to start but I will find one
Mine depends on the half hour discussion with myDr in the second week of Jan. I’m getting a lot of high blood pressure, but it also keeps plummeting, plus I get a lot of nausea, & other stuff. Nothing connected to PMR, so won’t waste your time by sharing…but it means I need permission first! But yes, you’re right, I need the same…other medical stuff is flaring a lot so now not good…then there’s the Christmas & New Year food, then the Dr’s meeting! I’m not tapering until after Dr’s meeting, either, so should be stable (as much as a nutty person can be)! S x
I use Pinterest ; great inspiring pictures and one can specify any dietary preferences. Lots of quick and more complicated options.
