I am looking at making a healthy mushroom curry but the recipe whch a friend of mine gave me eays to use coconut milk. . . .but how high is that in saturated fat !!!!!!!! So question is what can I use instead. Any ideas please would be fab. Thanks :))

Usually the ingredients are on the container. You can also look it up online.Querie the brand and whether it is sweetened or unsweetened for nutritional information. Goya brand has 9grams of Saturated fat in a 13.5 oz can. I hope this helps

I'd just check the coconut milk fat content that is normally on the packaging and if myself, knowing I would be making this dish, I'd limit my fat intake of the day as opposed to changing it if other substitutes aren't to your liking. I've never had a problem in doing this myself. I think that if you are making a dish yourself, at least you know what has gone into it unlike ready-prepared foods.
I've never been informed to cut out anything in my diet since being diagnosed with PBC but I think it makes sense to limit certain things (ie saturated fats and the notso good ones) plus also try to eliminate totally artificial sweeteners or MSG .
I think I have read that if someone with PBC is suffering from fatty stools then it would be advisable to really limit the fats (see a dietician I expect is then recommended).
