Peach Blackberry Crumble

This crumble is full of mineral-rich dates, omega 3-rich walnuts, and antioxidant-rich berries. It’s easy to make, too! Try it this summer when the berries and peaches are ripe (or use frozen fruit), and please leave a comment below, letting me know what you think.
Peach Blackberry Crumble
Prep Time: 15 minutes
Yield: 4-6 servings
This cobbler is raw, vegan, paleo, gluten-free, dairy-free and refined sugar-free. It tastes like a really delicious granola-type of breakfast, so it’s versatile and not just for dessert! Enjoy.
Filling Ingredients:
4 peaches peeled and chopped into bite-sized pieces.
½ cup blackberries
¼ t. vanilla extract
A pinch of salt
1 T. honey
1 T. lemon juice
Crust Ingredients:
¼ t. sea salt
1 cup pecans
1 cup walnuts
8 pitted dates
½ t. vanilla extract
Directions:
1. Mix all of the filling ingredients together in a ceramic casserole dish or other serving dish and let it sit while you work on the crust.
2.Put all the crust ingredients into the bowl of a food processor. Pulse the ingredients until a coarse dough forms. Grab the dough by a handful at a time, squeeze each handful to press the dough together then crumble it on top of the fruit mixture in the serving dish.
3. It will keep in the fridge for a day or so. The dough will get soggy, so don’t put it on top of the fruit until you’re ready to eat.
