It was supposed to be figs. Note to self: greengrocers aren't supermarkets, and seasonal produce aren't crisps; just because they had them yesterday, doesn't mean they will have them today!

Ok, own up, it was all the talk the other day about black pudding wasn’t it. You just had to have some and the mayo was just incidental. ;)

The black pudding was in my fridge because of the chat. It was a last minute inspiration to add it to the salad.

Yup. That's the marmite of charcuterie, and also a last minute addition to my recipe.

You might want 3 rashes of bacon if you omit it.

Oo I think I might and I would probably replace the apricot for avocado πŸ₯‘ 😊 I mix my Mayo with hard boiled eggs with cheese and salt for breakfast and take it to work and eat the rest for lunch... much more boring!!!!

Avocado would be fine, but it is then a very different dish. It's the mix of salty and sweet that makes it.

(I considered adding my very ripe avocado, but decided to have it for dessert instead)

Nectarine, figs, plums, peaches, even citrus segments, apples, pears, grapes.

Lots of ways to go, depending on your carb tolerance and your taste buds.
