Responsive reliable and accurate. !! It helps so much to have reliable sources along the way Piece by piece and step by step it works but then sooner or later a speed bump occurs. Autoimmune is such a challenge. I finally decided to try gf and found the severity and frequency decreased. Thank God for small steps.

I was surprised it helped me. Who would have thought we could have sensitivities to gluten?

If it’s not actually celiac, then it’s termed NCGI i think. Non Celiac Gluten Intolerance.

Usually, according to my allergy/ immunologist, people with the gluten intolerance usually have the same intolerance to dairy. It’s not the lactose, the the casein protein.

It turns out the gluten and casein protein are very similar in shape, so the body, ( often not as clever as it lets on ), gets confused and thinks they are one and the same , and both are fair game for attack.

My daughter and I have found we can handle a little bit of full heavy cream ( if we must) for espresso. Otherwise Oatly oat milk. Must be oatly for us- less additives. My allergist said that just us- some people may be allergic to the oat grain.

I can’t do any GF bread as yeast gives me migraines. I go dry cheerios. My daughter does little northern bake house- grains and seeds - if you like a decent traditional breakfast toast.

Thank u for the extra info.! Since I have no medical history ; it’s been a big science experiment . I do remember being on a very strict gluten free diet as a child. And hating every minute but in retrospect maybe a valiant effort to try and control symptoms Will look for your suggestions. !

GF products seem to have had a major revolution in the last few years- and really are much better in texture and taste, and variety and availability!

It’s a much better time to be GF than when you were a kid. I’m super cranky about the fact that I react to yeast. My world almost……. Opened up.

I’m glad this is working for you! I went GF years ago, when one had to be really creative about foods and sources. I tried it with the hope of helping my severe migraines and body pain, but it made no difference for me at all. Now, my son is trying GF and he says it’s helping his eczema, which he’s had since his early teens. High hopes there! It is always worth giving it a devoted try. Best of luck!
