Hi this was my brunch yesterday, kiln dried kipper, with two scrambled eggs.I'm rubbish at scrambling eggs, so they don't look v appealing but tasted fine.
The kippers came as a two pack, I'm having the second one tonight for tea with a salad. I try to eat oily fish x 2 a week.
I try to stick to two meals a day brunch and tea. I'm never hungry first thing so eating at breakfast time just feels like I'm forcing myself to eat.
But I do take meds, so I have a no added sugar actimel with them (27cals only) to line my stomach.

I sometimes do my scrambled eggs on the cooker and like it when it’s a little brown like yours are but now I mainly do them in the microwave and they are lovely and fluffy. 2 eggs with a bit of milk and season then and a small amount of butter. Only takes about 2-3 minutes I mix half way through.
I’ve not had kippers for years I use to be put of by finding bones but I might have to try them again your look nice.
I’m like you don’t do breakfast, when I do I find I more hungry the rest of the day.
Just this week I’m restarting as I’ve gained 2 stone in the last 2 years but they have been hard years. Like you trying to eat between 2pm and 10pm and with 2 meals with more protein and veg etc. fingers crossed I can stick to it.
When I make my scrambled eggs, two is the most I’ll ever use too. Then in the pan goes a small piece of butter to melt around the pan then in with the beaten eggs. With your spatula or wooden spoon draw in the setting egg mixture and it should be like sheets and a little shiny raw and then off the heat draw in the egg mixture to one side of the pan and then place onto your plate. It will look quite good alongside your kipper.
