My first full day eating the Mediterranean lifestyle. This evening was chicken Tuscan soup with multigrain and seed bread and olive oil.

thank you! Contents:

8 cups low or no salt added chicken broth (your choice, I make my own so there's very little sodium there)

Canalinni beans (no salt added 1 can drained)

diced fresh sweet potato (1 large)

1/2 med. onion chopped

2 cloves garlic, minced

spinach

shredded chicken (I used precooked chicken breast which is a little higher in sodium but the liquid offsets it)

I toss everything in a dutch oven with 1 tbsp olive oil and sautee the veggies and then add in the liquid and let it simmer for 30 minutes.
