What sort of greens? Spring greens? Or mixed green veg?

To be fair, it won't make a difference to my suggestions anyway: steam or stir fry with a bit of garlic and lemon rind :)

Yum. I like my greens (any kind) pan-fried in butter with some salt.🥬🥬🥬🧈

If some of the greens are spinach leaves, I would add them to a big salad for the main course at a lunch or dinner. 😀👍🥬

Either steam as the others have said or put in a pan with boiling water for no more than 10 minutes, much less for spinach. Don't throw cooking water away, either drink it or use it to make soup.

When you said greens, my brain asked, collard or turnip greens? It’s a southern thing in the U.S. Boil them down in a little water with a ham hock, salt and pepper. They’re tough, dark green and big (overflowing to say the least) so a huge Dutch oven is needed. Serve with cornbread and you’ve got yourself a meal. Yes, don’t throw out the water!
